Pumpkin Pie Oatmeal

I am fairly new to the oatmeal scene, but I have kind of fallen in love with steel cut oats. They are healthy, high in fiber and protein therefore they fill you up and keep you going longer. Which is great for someone like me who finds myself more often than not wanting to eat lunch at 10:45 am. 🙂 Whenever I eat this oatmeal I can actually make it to a more acceptable meal time! 

Pumpkin Pie Oatmeal

This oatmeal is like eating pumpkin pie for breakfast except this is actually good for you and won’t leave you with a sugar crash 30 minutes later. It’s creamy and basically taste like a fall explosion in your mouth. I mean who doesn’t like dessert for breakfast!

Creamy, delicious, and healthy version of pumpkin pie for breakfast!

Ingredients
  1. 3 cups of water
  2. 1 cup of steel cut oats
  3. 2 tbsp of coconut sugar
  4. 3 tbsp of organic canned pumpkin pie
  5. 1 tsp of vanilla extract
  6. 1/4 tsp of salt
Instructions
  1. Add 3 cups of water to a pot and boil.
  2. Once boiling add oats and salt, cover pot and turn down to low.
  3. Stir Occasionally
  4. After 30 minutes and most of the water has been absorbed take the pot off the heat.
  5. Add coconut sugar, pumpkin pie, and vanilla.
  6. Stir everything together and then Enjoy!
Notes
  1. You could also top your oatmeal with chocolate chips or extra cinnamon!
  2. If you like your oatmeal extra creamy you could use milk instead of water.

Thinking Out Loud #11

I’m joining Amanda this morning and Thinking Out Loud about a few things that have been on my mind this week….

1. Fall!!! I know it’s still officially summer and believe me here in South Ga we still have a couple more months of hot weather, but with the start of September I begin gearing up for my favorite time of the year. I’ve already broke out the pumpkin and I cannot get enough of these muffins! I want them all day everyday! I’m serious guys.

2. I really need a new pair of running shoes. My last several pair of running shoes have been Mizunos and they have been wonderful so I will be sticking with them. The hard part is deciding on which ones. So many fun colors and I want them all…. Here a few of my favorites. Help me decide!!!

3. I was so excited when I came across these dark chocolate Enjoy Life morsels the other day! I knew they existed but I had not been able to find them. I now have several bags in my pantry.

4. Are there any other Anne fans out there?? Anne of Green Gables was my all time favorite movie growing up and it still is today. I had a couple of hours on Sunday to myself and I pulled out my Anne dvd and watched it. My heart is happy! 🙂

Coconut Flour Pumpkin Chocolate Chip Muffins

Is anyone else as excited about Fall as I am?? I cannot wait for the leaves to change and to feel the crisp cool air! Not to mention all the delicious pumpkin recipes!!! I’ve recently discovered coconut flour and have started baking with it like crazy around here.

I’m honestly sad that it took me so long to try it. It is such a great option if you are looking for a healthy, delicious, grain free (gluten free) baking option. If you have never baked with coconut flour then I urge you to try this recipe, it will truly open your eyes to how easy it is to bake with out using wheat or other grains.

I always look forward to this time of year so I can bake pumpkin breads, cookies, muffins etc…. and this is the first time I’m doing it using coconut flour. These muffins came out great. Pumpkin + Chocolate is the best combination. The texture is so fluffy and perfect….

Friday’s Favorites (8/29/14)

Hi Guys, sorry it’s been a little while. I’ve been busy living life but I promise I haven’t forgotten about you guys. I’ve been enjoying these last few weeks of summer and anxiously awaiting Fall! Anyone else eager to make all things PUMPKIN!!! Here are a few things I’ve been loving lately….

1. Running Outside

Nothing starts the day better than a run outside. It’s so invigorating and always puts me in a better mood. We’ve had some almost Fall like weather the last few mornings and it has felt great!

I love making a cup of this in the afternoon for a little pick me up. It also reminds me of Fall with all the spices.

3. Birthdays!!!

I love it when birthdays coincide with a holiday and with mine being the last day of August it usually means a long weekend for me! Yay! This year we will be spending it in Charleston, SC with some good friends!
