About Me

I’m Jennifer (Jen), welcome to Saved by the Kale!

Black Mountain

I love to eat…seriously I do! I love coffee. I try to eat gluten and dairy free most of the time, but I also strive for balance. So I will treat myself to ice cream and cake from time to time. 🙂

I live with my husband, Jim, who is my best friend and my biggest cheerleader!

I have grown alot as a person over the last few years and have enjoyed exploring and rediscovering some of my passions.  I have always enjoyed yoga but have recently gotten more serious about practicing it. I love learning new poses.

I am always working on pushing myself and stepping out of my comfort zone. I love the quote, “If it doesn’t challenge you, it won’t change you.”

I’m also a Dreamer. I don’t believe that any dream is too big. If you want it, then go for it! If you are not happy where you are then take the steps (maybe even baby steps) to get to where you want to be. “Live the life you’ve imagined!”

So keep an open mind and join me on this exploration of healthy living, mindful intentions and (most importantly) living life to the fullest.
