Fall 2016 To-Do List

September 26, 2016

Why is it that the best times of the year have to go by so fast?! The last 3 months of the year are my absolute favorite… there is so much activity and so many fun things to do. The hot Georgia weather finally starts to cool down. I love cool, crisp mornings and days where I can snuggle in a sweater with a hot beverage. We don’t really ever get to do all the things we would like to do during this magical time of year but I do like to create a list each year to make sure we do as many of our favorite things as possible.

Fall 2016 To Do ListTake advantage of the 25 miles of paved biking trails on nearby Jekyll Island.

I want Jim and I to have some biking dates while the girls are at school. jekyll-island-biking

After dinner bike rides around the neighborhood as a family

I love our little neighborhood, there are so many beautiful trees and during the Fall it is spectacular. I just love it when the leaves start falling. There is nothing like the crunch of a leaf to let you know Fall is here.

Corn Mazes

It’s always a fun tradition to visit a farm and get lost in a corn maze for an hour! Jim and I always enjoyed doing haunted corn mazes at night, but not quite sure the girls are up for that yet! 🙂

Poppell Farms

Pumpkins!

Picking out our pumpkins to carve and to paint! The girls absolutely love painting small pumpkins.

Spend at least one evening each week with the fire pit!

Go on a Hay Ride.

Who doesn’t love a hayride?

Go to a Fall Festival.

Fall festivals always remind me of being a kid. Lots of super fun memories for me.

Go trick or treating.

Our neighborhood has a very Gilmorish feel during the Fall. I love how the whole community goes all out for Halloween.

Trick or Treat

Go on family hikes

We’ve only been able to do short, 1 mile or so, hikes so far. Maybe the girls can hold on for longer hikes this year.

Fall Food

Lily has requested we make Candy Apples.

Watch Hocus Pocus!

My favorite!

hocus pocus

Host a outdoor dinner party/Friendsgiving!

This is something Jim and I have been wanting to do for a couple of years. Friendsgiving suggestions are welcome in the comments!

Go to an outdoor concert

I like concerts and beautiful fall evenings, seems like a perfect match to me!

I would love to hear something you are planning to do this Fall!

5 Things Making Me Happy! #3

November 7, 2014

Hi guys! How’s everyones week been? It’s been a busy one for us. I’ve been taking down Halloween decor and getting it all put away. Lily had her last couple of cheer games this week, and Jim and I have been in the kitchen cooking up all kind of delicious creations for the blog. With the weather being cooler it makes being in the kitchen baking and cooking even more fun than usual! This weekend we have some fun things planned. A Pecan Festival in a neighboring town Saturday morning and then Saturday evening we have a Fall Festival at mine and Jim’s old high school. Well actually it was also my elementary school too. There have been so many wonderful memories there.  It was a Magnet School and sadly it was shut down several years back due to budgeting. The school has been turned into a community center and the community puts on a wonderful Fall Festival, just like the ones I remember going to while I was in school. It’s is fun taking our girls back there and sharing stories with them!

Now on to the things making me happy this week!

1. Honey Crisp Apples – I love almost any kind of apple as long as it is firm and crisp with just the right about of sweet vs. tartness and oh my goodness I think the Honey Crisp Apple crop has been extra delicious this year! I have been enjoying one almost everyday as an afternoon snack.

2. Yellow Flicker Beat – On mine and Jim’s 1 hour and 45 minute drive back from Jacksonville the other night I listened to this song non stop! Obsessed much….yeah that’s me! Oh and is anyone else excited about Mockingjay coming out later this month!?!

 3. I reserve my pancake eating for Sunday mornings after I finish my long run! Currently I am in love with these from Immaculate Baking Company. Their Organic Pancake and Waffle Mix is delicious. I follow the directions on the box, where it calls for milk I use coconut milk. I love to top mine with a little ginger syrup!

4. Last month my goal was to run 100 miles, I ended the month at 102 miles. It was challenging but fun, just enough to keep me on my toes. No slacking! This month I plan to do the same.

5. and please tell me that I am not the only one that this happens too! 🙂

Pecan Pie Truffles

October 30, 2014

I have no doubt that you’re going to be quite angry with me once you make this recipe. Your upcoming Pecan Pie Truffles addiction can be squarely blamed on me… I’ll take it. These might be the most devilishly delicious fall treat that I’ve ever had. I love truffles with a passion and I’ve never had any that are better than these.

I’ve always loved Pecan Pie filling, but not so much the crust. I’m not a huge fan of pies anyway. Most people tend to burn the crust when they’re making pecan pies… a big turnoff for me. So while Jen and I were planning what Fall themed recipes we wanted on the blog I mentioned pecan pie. I thought how delicious the filling would be and how much I would dread having to work with a crust just to be disappointed. Then and there the idea of pecan pie in truffle form took shape.

Pecan Pie Truffle filling

These are the stickiest, gooey-ist, pecan-iest, and best truffles that you’re going to have. I’m not kidding about the stickiest part… you’re going to get messy making these, but it’s totally worth it. They aren’t healthy in any way, but if you get invited to some creative truffle competition over the holidays then you’re well-prepared with these.

Ingredients
  1. 3 Tbsp butter
  2. 1/2 C light brown sugar
  3. 1/2 C light corn syrup
  4. Dash kosher salt
  5. 2 Tbsp Vanilla extract
  6. 1.5 C toasted pecans, chopped
  7. 2 tsp bourbon (optional)
  8. 2 C dark chocolate
Instructions
  1. Make the filling: Place butter, brown sugar and corn syrup in a sauce pan over med-high heat. Bring to a boil, whisking frequently. Remove from heat and add pecans, salt, vanilla, and bourbon (if using). Stir to combine and cool in fridge until very firm.
  2. Prepare coating: Melt chocolate in a double-boiler and keep warm.
  3. Make truffles: Line a baking pan with parchment paper. Scoop filling out with a melon-baller and roll by hand into 1-inch spheres. Toss in melted chocolate to coat and place on parchment paper.
  4. Make the truffles in batches, putting the filling and the completed truffles in the freezer to keep them together.
  5. Store truffles in a covered container in the fridge.

5 Things Making Me Happy!

October 24, 2014

1. One thing that will always make the top of this list is COFFEE! I read one day how it is good for you and the next how it will ruin your life. But you know what, I love it and it makes me happy to get up in the mornings so that’s good enough for me!

coffee

2. Going on long runs! Up until a couple of months ago my longest run was 6.5 miles. Then one morning I decided to push myself a little and I ran 8 miles. Mentally though it was so tough doing that on my own. A friend invited me to run along with her in a local running group. I cannot tell how nice it is to run with others that enjoy it and challenge each other. Since joining them my longest run was 13.1 miles a couple of weeks ago!

Strength Motivational

3. Fall! In my opinion the absolute best time of the year! In the South fall is a little tricky. The weather usually yo yo’s. It can go from highs in the 90’s one day to highs in the 70’s the next. I love those days in the 70’s! To me that is perfect. There is a chill in the air and I can break out the sweaters. There is nothing more comfy than being snuggled in a sweater. 🙂

4. New running shoes! These were long over due. It is amazing what a difference new shoes make. My feet and legs are happy! My last 4 pair of running shoes have been Mizunos. I love them!

5. Baking! Fall and baking go hand and hand to me. It seems about every other day I am making muffins, or cookies or banana bread, my current obsession! Here are a couple of my favorites….
