Healthier Banana Bread Recipe

What do you do when you have an extra bunch of super ripe bananas sitting around…you make banana bread of course! My 2 girls request banana bread all the time so I have played around with making it lots of ways. This one is definitely a keeper. It is delicious, dense but still fluffy and moist and just sweet enough. Perfect for a quick breakfast in the morning or an afternoon snack when you get the munchies.

I love using coconut oil with this recipe and the coconut palm sugar is a healthier alternative to brown or white sugar.

Ingredients
  1. 4 ripe bananas
  2. 1/3 cup of coconut oil (melted)
  3. 1 egg
  4. 2/3 cup of coconut palm sugar
  5. 1 tsp vanilla extract
  6. 1 tsp baking soda
  7. 1/4 tsp salt
  8. 1 cup whole wheat pastry flour
  9. 1/2 cup self rising flour
  10. 1/2 cup dark chocolate chip (I use Enjoy Life) (reserve some for sprinkling on top)
Instructions
  1. Preheat oven to 350 degrees
  2. In a bowl mash bananas
  3. Add oil
  4. Whisk egg in a separate bowl, then add to bananas.
  5. Add sugar, vanilla, baking soda, and salt to bowl.
  6. Stir
  7. Then add flour and chocolate chips.
  8. Stir until incorporated.
  9. Pour into loaf pan and top with reserved chocolate chips.
  10. Bake for 45 minutes.

Probiotic Enzyme Salad

A few months ago a friend loaned me a book The Beauty Detox Solution. There were lots of good recipes and information in the book.  A few weeks ago I tried making the Probiotic Enzyme Salad that she talks about in the book.  It was very easy to make.  You only need cabbage, salt, and filtered water.  This salad helps promote optimal digestion and the cleansing of acidic waste, which helps contribute to increased energy. You let it ferment in your pantry for about a week, when you open the jar be prepared for a strong strong smell.  The taste is not bad at all, just tangy like sauerkraut. It is packed full of vitamin C and healthy bacteria. I encourage you to give this a try.  It will help balance the pH in your body and make your body happier. I eat about 1/2 cup each day at dinner time.

Quinoa Fruit Salad

I stumbled upon this delicious recipe for Quinoa Fruit Salad on Pinterest and decided to try it out.  It is amazing!  It makes a great side dish or snack. It would even be good to eat for breakfast.

You can add whatever fruit you like or have on hand. I love mangos, so I knew I had to add those.  Also added blueberries and strawberries.

Here is the recipe.

Quinoa Fruit Salad

Yield: Serves 6-as a side dish

Prep Time: 5 minutes

Cook Time: 20 minutes

Total Time: 25 minutes

Quinoa with blueberries, strawberries, mango, and a refreshing honey lime dressing. This easy and healthy Quinoa Fruit Salad goes well with any summer meal.

Ingredients:

  • 1 cup quinoa
  • 2 cups water
  • Pinch of salt

For the Honey Lime Dressing:

  • Juice of 1 large lime
  • 3 tablespoons honey
  • 2 tablespoons finely chopped fresh mint

For the fruit:

  • 1 1/2 cups blueberries
  • 1 1/2 cups sliced strawberries
  • 1 1/2 cups chopped mango
  • Extra chopped mint, for garnish-optional

Directions:

1. Using a strainer, rinse the quinoa under cold water. Add quinoa, water, and salt to a medium saucepan and bring to a boil over medium heat. Boil for 5 minutes. Turn the heat to low and simmer for about 15 minutes, or until water is absorbed. Remove from heat and fluff with a fork. Let quinoa cool to room temperature.

2. To make the Honey Lime Dressing: In a medium bowl, whisk the lime juice, honey, and mint together until combined.

3. In a large bowl, combine quinoa, blueberries, strawberries, and mango. Pour honey lime dressing over the fruit salad and mix until well combined. Garnish with additional mint, if desired. Serve at room temperature or chilled.

Note: Use your favorite fruit in this salad. Blackberries, peaches, kiwi, raspberries, pineapple, grapes, etc. are great options!
