Bacon Molasses Brussels Sprouts

My first memory of Brussels Sprouts is when I was much younger and my Dad put 3 of these little cabbage looking things on my plate. I thought they smelled bad and I took one bite and, well, I think that was my last bite of them until about a year ago. 

I kept seeing so many recipes for roasted brussels sprouts that I finally decided to give them another chance, except this time on my terms! 🙂  My mind has been forever changed. They have quickly become one of my favorite vegetables to eat.

Banana Date Smoothie

I ventured a little out of my smoothie comfort zone with this recipe. My usual smoothies always consist of something green…kale, spinach, swiss chard, you get the point.  It’s rare that I make a sweeter smoothie. In my 34 years  I don’t think I’ve ever tried a date.  I decided to pick some up last time I was in Whole Foods. Although this smoothie is sweet it is still very healthy and is only sweetened by nature. 🙂 This was my first little experiment with dates and I can’t wait to try them in more recipes. They have won me over!

This smoothie is packed with antioxidants with the addition of the chia seeds and cacao nibs. A Double Superfood Smoothie!

In case you are new to cacao nibs they are extremely good for you and have an intense chocolaty taste. Raw cacao nibs are roasted cacao beans made into raw chocolate. They are a great source of magnesium, iron, and fiber. They are raw, vegan, gluten free and considered a Superfood!

Ingredients
  1. 1 frozen banana
  2. 3 dates (pits removed)
  3. 1 tbsp chia seeds
  4. 1/2 tbsp cacao nibs
  5. 3/4 cup water
Instructions
  1. Place all the ingredients into a blender (I use a Vitamix) and blend for 30-60 seconds depending on the consistency you are wanting.

Valentine’s Recap + The Best Alfredo

Sorry this is a little late, but I wanted to do a little Valentine’s Day recap.  First, it is really fun now that we are all grown up and have kids of our own and we can watch how they get so excited for holidays and occasions. My youngest, Emma, who is 2 was so excited when I got her up that morning and I told her it was Valentine’s Day. She jumped right up and was ready to go. She said. “It’s Valentine’s Day, it really is! We get to go to it!” I think she might have been just a little confused 🙂 but as excited as ever! They were excited to get special Valentine muffins for breakfast with a candle, because what kid does not like a candle and also special Valentines and treats throughout the day. All month I have been putting hearts on their bedroom doors telling them all the things we love about them and every morning they couldn’t wait to see what new heart was on their door. 

As for Jim and myself, just being able to have a quiet dinner is a treat for us. With a 5 and 2 year olds that doesn’t happen very often. We decided to have our dinner a little later that evening, after the girls were in bed, and it was most definitely worth the wait! Earlier that week we talked it over and decided what we wanted to have and we have been anxiously waiting for it all week! I will say that there was absolutely nothing about the meal that was healthy… but oh my goodness it was delicious! On the menu was…

Earlier on Friday when I went to buy what we needed, I tried my best to buy gluten free pasta, but no, Jim would not hear of it. See, we rarely make this meal. I know it has been well over a year since we have had it and Jim wanted the real deal. I even tried to compromise and let us get whole wheat pasta but, no, this was just regular white pasta! It was very hard for me to buy that but I did because that is what Jim really wanted and this day is all about LOVE, right! 🙂 …

They are perfect for breakfast, snacking or anytime you feel the need for something awesome! Gluten free does not have to mean dry and flat, these muffins are moist and incredibly fluffy! Bonus they are also dairy free.
