What I Ate Wednesday

What I Ate Wednesday is a weekly peek into what I’m eating throughout the day. These are the meals and snacks that I had on Tuesday. Follow along and comment with what you ate!

Started my day out right with some warm lemon water!

Then had some low acid Puroast coffee.

Then I did some ab exercises at home and had a juice (carrots, apples, and ginger) before heading to the gym!

I had a pre lunch smoothie…kale, orange, pineapple, and chia seeds.

For lunch I had this awesome salad and some of this Kevita Probiotic drink!

After lunch I wanted a little something sweet so I had a little dark chocolate and 2 cups of green tea.

Before Dinner I had my Probiotic Enzyme Salad, but if forgot to snap a picture of it..sorry!

Dinner was Awesome! Half of a Sweet Potato (baked in the oven) they are so much better that way. The Best Lentil Salad Ever, which was the hit of this meal.  I am seriously in love with it.  Recipe will be up on the blog soon! Also a scramble made up of kale, link of chicken sausage, onion, quinoa, broccoli, and yellow squash.

Also had a Fiber Luna Bar and my Ginger Turmeric Tea.

Spaghetti with Tomato and Lemon

I picked up a new cookbook this summer called Simply Delicious Vegetarian and that is where this recipe comes from.  They had such a great photo of it in the cookbook I knew I had to try it. The only substitution I made was using brown rice spaghetti instead of regular pasta. I try to eat gluten free as much as possible so I love using brown rice pasta. The texture and taste is great! This was great the first night but even better the next day as the flavors had more time to meld together.

Here’s the recipe:

Serves 4-6

Prep time 10 minutes

Cooking time 15 minutes

What you need:

2 lb ripe tomatoes

1lb spaghetti (I used brown rice spaghetti)

4 tbsp finely chopped basil + extra leaves to garnish

1/3 extra virgin olive oil

Freshly squeezed juice of 1 lemon

2 cloves garlic finely chopped

Salt and pepper to taste

Blanch the tomatoes in boiling water for 2 minutes. Drain and peel them. Chop coarsely.

Cook the pasta in a large pot of salted boiling water until al dente. Drain well and trasfer to a large serving dish.

Add the tomatoes, basil, oil, lemon juice, and garlic. Season with salt and pepper. Toss well. Garnish with basil and serve hot.

What I Ate Wednesday

What I Ate Wednesday is a weekly peek into what I’m eating throughout the day. These are the meals and snacks that I had on Tuesday. Follow along and comment with what you ate!

Like usually my day started with a mug of warm lemon water and was followed by a cup of coffee!

I was so excited when I found my Puroast low acid coffee in keurig cups at my local grocery store!!

Before heading out to the gym I made some juice. Carrots, Apples, and Ginger! I can’t even tell you how good this stuff is!

After I got home from doing my workout, I made another juice. This one consisted of beets, orange, celery, lemon, carrot, and parsley.

For lunch I had some Cranberry Kombucha and Spaghetti w/ Tomatoes and Lemon (recipe to come soon!) and a Spinach Salad w/ Bragg Vinaigrette.  My first time trying the vinaigrette and I loved it!

Later I had two cups of green tea for an afternoon pick me up!

I also had a pre dinner smoothie but I forgot to take a pic of it.  Mango, banana, kale, and chia seeds.  It was delicious, one of the most delicious mangos I think I have ever eaten.

For dinner I made a scramble with chicken sausage that had spinach and red onion in it.  Kale, onion, asparagus, brown rice and quinoa.

Then I wanted something a little sweet so I had a little of this Smores Luna Bar.

and I ended the night with my Turmeric and Ginger Tea with a dash of cinnamon!

I have been loving our juicer.  I have started everyday with a juice of some kind.  My favorite morning juice has been carrots, apples, and ginger.
