What I Ate Wednesday

What I Ate Wednesday is a weekly peek into what I’m eating throughout the day. These are the meals and snacks that I had on Tuesday. Follow along and comment with what you ate!

This morning I drank my smoothie on the way to take my oldest to tennis camp.  It was pear, celery, lemon, kale, beet greens, chia seeds, cilantro and water.

 

Then we stopped at Panera where I got a soy mocha and a spinach and bacon souffle.  Those little souffle’s are super hard to resist, so I treat myself to one once a week!

 

I had a couple of cups of green tea.

 

 

For lunch I had a spinach salad topped with some roasted beets that I made on Monday, black beans, onions and a carrot ginger dressing.  It was so good!  This was my first time preparing beets and they were so easy to do and delicious.  They really made the salad!

 

In the afternoon I drank about half of this Aloe Gloe.  I love this stuff!

 

My pre dinner smoothie was a plum and cucumber (that I purchased from the Farmer’s Market on Saturday), about an inch of ginger, a couple of handfuls of spinach, and about 3/4 cup of water.

 

For dinner I made brown rice pasta, roasted beets, and roasted broccoli and mushrooms. I love the flavor of roasted veggies.

 

Later in the evening I had a couple of couple of cups of Turmeric and Ginger Tea.

and for a snack I had a bowl of half naked popcorn that I sprinkled with a little cinnamon and celtic sea salt.
